Equipment

  • 1 measuring scales
  • 1 bowl for weighing ingredients
  • 1 hand whisk for mixing the dry ingredients
  • 1 pot for melting butter
  • 1 dough scraper
  • 1 Food mixer with a dough hook for mixing ingredients
  • 1 tongs or waffle fork for lifting waffles out of waffle iron
  • 1 waffle maker for baking waffles
  • 1 baking tray for letting the dough balls rise
  • 1 timer/stopwatch baking timer

Materials

  • 500 g Strong flour / Bread Flour
  • 80 g caster sugar
  • 5 g salt
  • 10 g instant yeast
  • 90 g unsalted butter
  • 1 egg
  • 225 5 full fat milk
  • 65 g pearl sugar

Instructions

  • on a hob melt the unsalted butter in a pot
  • pour the milk into your the machine mixing bowl
  • crack your egg into the machine mixing bowl
  • put the sugar, salt, flour and yeast into a separate mixing bowl and mix with your hand whisk.
  • add the sugar, salt, flour and yeast to milk and egg (adding the melted butter last so it's not touching the egg or milk), turn on your mixer to medium speed.
  • using the dough hook attachment mix until thoroughly combined. The dough will be sticky.
  • when the dough is combined add the pearl sugar and mix until evenly mixed through.
  • weigh your dough and separate info 10 equal portions, using a little flour in your hands form them into balls. (if you want smaller or bigger waffles just adapt your sizes as needed.
  • place your dough balls into a lightly dusted baking tray, leave enough space for them to rise, cover the baking tray with a damp cloth and leave them to rise for 45 mins to 1 hour.
  • when your doughballs are almost ready preheat your waffle maker. I heat mine closed and your aiming for 200 degrees (follow your manufactures instructions.
  • when your waffle maker is heated you are ready to bake
  • carefully lift 1 dough ball trying not to deflate the doughball and place it on your waffle maker, then close your waffle iron. Turn on your timer/stopwatch and keep an eye on how long it will take to bake so you can repeat the process for the rest of the waffles. It could take between 2 to 4 minutes depending on your waffle maker. Repeat this baking process for all your doughballs.
    **remember the waffle maker is very hot so be careful.
  • carefully lift the waffles off the waffle maker when they have baked using your waffle fork
  • You can eat your waffles hot or they will freeze up to 6 months. They should keep fresh for 3 days in an airtight container.
