Cinnamon Flakemeal Biscuits

Most of us in Northern Ireland grew up on a good flakemeal biscuit…mmmm sweet & wholesome (at least it feels it!).

Whether you’re after that comforting nostalgia or a new bake, give this a go! We’ve added a twist with some cinnamon sugar on top for festive fragrance, or go extra moreish and half dip them in chocolate!

Oatmeal Biscuits

Equipment

  • 1 mixer
  • 1 biscuit cutter
  • 1 Rolling Pin

Ingredients
  

  • 120 g Unsalted butter
  • 60 g caster sugar
  • 150 g porridge oats
  • 60 g plain flour
  • 1 pinch salt

Instructions
 

  • Cream the margarine and the sugar together until light and fluffy
  • Add the dry ingredients and mix until well combined
  • Once mixed pour the dough out onto a well floured surface
  • Using a rolling pin roll the mixture out so it's about 2cm thick
  • Then, using a round pastry cutter cut out your oatmeal biscuits
  • Place onto a non stick baking sheet and bake at 170C for about 25 minutes
  • you'll know they're ready when they're a light golden brown and still a wee bit soft
  • Once removed from the oven sprinkle the top with some caster sugar then let them cool
