Most of us in Northern Ireland grew up on a good flakemeal biscuit…mmmm sweet & wholesome (at least it feels it!).
Whether you’re after that comforting nostalgia or a new bake, give this a go! We’ve added a twist with some cinnamon sugar on top for festive fragrance, or go extra moreish and half dip them in chocolate!

1 mixer
1 biscuit cutter
1 Rolling Pin
- 120 g Unsalted butter
- 60 g caster sugar
- 150 g porridge oats
- 60 g plain flour
- 1 pinch salt
Cream the margarine and the sugar together until light and fluffy
Add the dry ingredients and mix until well combined
Once mixed pour the dough out onto a well floured surface
Using a rolling pin roll the mixture out so it's about 2cm thick
Then, using a round pastry cutter cut out your oatmeal biscuits
Place onto a non stick baking sheet and bake at 170C for about 25 minutes
you'll know they're ready when they're a light golden brown and still a wee bit soft
Once removed from the oven sprinkle the top with some caster sugar then let them cool
