Apple Cake

My granny taught me to make apple crumble when I was a child. It’s been one of my favourite comfort foods ever since & her recipe still graces our table. I had never ventured to bake apple cake until recently. Boy I’m glad I did! This is delicious & quick to throw together. We’ve always accompanied apple bakes with custard but drizzled with the waffleman’s Sticky Toffee Sauce & topped with vanilla ice-cream this is a whole other level of deliciousness! Prep Time: 10 minutes

Cook Time: 40-50 minutes

Serves: 8

Ingredients:

  • 2-3 Bramley apples
  • a little lemon juice
  • ½ cup unsalted butter, melted
  • ½ cup demerara sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ tbsp baking powder
  • 1 cup plain flour

Method:

Preheat the oven to 180oC, and line a 10-inch springform tin. Peel and slice the apples & mix in the lemon juice to prevent browning. Whisk together the melted butter & sugar. Mix in the eggs & vanilla. Stir in the baking powder & flour. Stir in the apple and pour into the tin. Bake for 40-50 minutes, until golden brown & cooked through. Top with B&R Sticky Toffee Sauce & a scoop of vanilla ice cream.
