Fluffy Pancakes

Homemade pancakes are a fun and easy option for breakfast or lunch. Try this deliciously fluffy version you can pop in a pan or waffle up if you have an iron (who doesn’t want sauce traps?!). We love them covered in cinnamon sugar and honey!

Serves: 10 large pancakes

Ingredients:

  • 270g plain flour
  • 10g baking powder
  • 5g salt
  • 60g caster sugar
  • 260ml milk (full fat or whichever you prefer)
  • 2 large eggs
  • 60g butter (melted)

Method:

Mix together the flour, baking powder, salt and caster sugar. Add the milk and eggs to the dry ingredients and whisk together. Mix in the melted butter until you have a smooth batter. Heat a frying pan to medium heat. Using a ladle, scoop some batter into the pan and fry until bubbles come to the top of the pancake. Flip your pancake over and fry until golden brown on both sides. Sprinkle with cinnamon sugar or spread with your favourite sauce!
