Cinnamon Flakemeal Biscuits

Most of us in Northern Ireland grew up on a good flakemeal biscuit…mmmm sweet & wholesome (at least it feels it!). Whether you’re after that comforting nostalgia or a new bake, give this a go! We’ve added a twist with some cinnamon sugar on top for festive fragrance, or go extra moreish and half dip them in chocolate!

Prep Time: 10 minutes

Cook Time: 25 minutes

Serves: 12

Ingredients:

  • Pinch of Baking Soda
  • Pinch of Salt
  • 240g Unsalted Butter
  • 120g Plain Flour
  • 300g Oats
  • 120g Caster sugar
  • Cinnamon Sugar for sprinkling

Method:

Cream the butter and the sugar together until light and fluffy. Add the dry ingredients and combine. Roll the mixture out until 2cm thick. Use a round pastry cutter to cut out the biscuits. Place onto a non stick baking sheet and bake at 170C for about 25 minutes (until golden but stil soft). Remove from the oven and sprinkle with some cinnamon sugar. Leave to cool and enjoy!
